There needs to be a FAQ on this stuff :-)

The older Palm OS (pre 5.2.1) had a Databook application.  It did not have categories.  The 
newer Palm OS has a Calendar application which has categories.  J-Pilot currently only supports 
the Datebook application.  This is handled in the Palm through a legacy interface which allows 
the Calendar to be interfaced with as the Datebook application would have been.  The newer 
fields, i.e. Category are not supported in that interface.

The short answer: You can't yet.
