JPilot has a backup option, right on the main menu. That backup contains Palm files in native Palm format. Try it out and then look in ~/.jpilot and find the backup directory (or directories) there. JPilot will also let you set how many generations of these backups you want. I have that set to 5. Each set will have a date associated with the date the backup was performed. That date will be the name of the directory where the files are housed.
