You need a space between the "ttyUSB1" and the "-u". As you can see, it
is trying to connect to the port named "/dev/ttyUSB1-u", which of course
is not correct.

Well, if you start it manually by typing "jpilot-sync" at a command
prompt, then of course it's going to start!

You don't need to delete jpilot-sync, just don't start it. Try the
install-user command again with the correct port. Type the command into
a terminal window:
install-user -p /dev/ttyUSB1 -u eamann -i 12345
but don't press Enter yet. Then cradle your handheld and hit the
hotsync button. Then hit Enter in the terminal window with the
install-user command. If it says it can't bind to the port, immediately
hit the up arrow on your keyboard to bring the install-user command up
in the history and hit Enter again. Keep doing that until it either
connects or the handheld hotsync times out.
